
Ingredients
1 Large Hash Brown, cooked until crispy
1 Large Dollop of Whipped Avo
1 Poached Egg
1 tbsp Hollandaise Sauce
Chives, to garnish
Method

Cook the hash brown until golden and crispy. Poach egg until your liking.

Add a large dollop of Whipped Avocado, on top. Recipe here

Use a spoon to create a small well in the avocado butter.

Place the poached egg into the well.

Top with hollandaise sauce and a sprinkle of chives.
For the Hashbrown

Store bought hash browns are fine, but to make a home made hash brown grate a potato per person, wash in cold water and then squeeze out liquid with a clean tea towel.
In a bowl mix the potato, 1tbsp of corn starch per potato and season with salt and pepper.
Fry over medium heat until golden and crunchy.
