Marinate the chicken by tossing it in a bowl with the olive oil, taco seasoning and a little salt and pepper. Set aside for 10 minutes or overnight if you want to be an organised prep hero.
Preheat a frying pan over a medium/high heat, add the chicken and cook for 3 minutes each side. Use a lid to cover the chicken while cooking.
Remove from the pan and let it rest for 2 minutes before thickly slicing and place onto a plate.
Combine the tomato, onion, coriander and the juice of 1 lime, season with a little salt, then place in a small bowl.

Place the lettuce in another small bowl.
To make the tacos, place some lettuce into a warmed tortilla, top with some chicken, salsa and sliced avocado squeeze over lime juice to serve.
