Toasted Avocado and Bean Burrito

Ingredients

1 ripe Hass avocado
1 tsp olive oil
½ brown onion, diced
1 small garlic clove, minced
½ red capsicum, diced
1 can black beans, drained
small pinch of cumin, paprika, chilli flakes & black pepper
2 cherry tomatoes, diced
1 tbsp coriander, finely chopped
juice of ½ lime
¼ cup grated cheese
2 wholegrain tortilla wraps

Method

Heat oil in a large frypan over medium heat and sauté onion, garlic and capsicum for 2–3 minutes.

Add the beans and spices and cook for another few minutes.

Dice half of the avocado and place in a medium bowl with tomato, coriander and lime juice.

Mash remaining avocado and spread on each tortilla.

Top with the bean mixture, a few tablespoons of the avocado mixture & grated cheese.

Fold up each tortilla and place in sandwich press and toast until golden. Enjoy!
