The avo-licious pig

Ingredients

1/4 cup miso paste
2 tbs maple syrup
2 tbs rice wine vinegar
1/4 cup brown sugar
1 tbs kecap manis
1 tsp wasabi paste
1 avocado, finely chopped
1 mango, finely chopped
1 tbs finely chopped red onion
½ cup fresh coriander leaves, coarsely chopped
4 pork cutlets, bone in
Lime wedges

Method

Combine miso, maple syrup, vinegar, brown sugar, kecap manis and wasabi in a bowl. Set glaze aside.

Combine avocado, mango, onion and coriander in a bowl. Season with salt and pepper. Set salsa aside.

Heat a frying pan over medium-high heat. Cook pork for 5 minutes. Turn and cook for 4 minutes or until cooked to your liking (see note). Brush pork with glaze and cook for 30 seconds. Turn and repeat for other side of pork.

Transfer pork to a plate and set aside for 2 minutes to rest. Top pork with salsa and serve with lime wedges.

You should be able to cook the pork without oil but you can add some if you find the meat is sticking.
