Chicken Shawarma Bowl with Avocado Tzatziki

Ingredients

2 chicken breast or thigh fillets, sliced
1 teaspoon shawarma spice, found at any Middle Eastern Grocer
¼ teaspoon sumac
¼ teaspoon paprika
¼ teaspoon turmeric
salt & pepper to taste
1 tablespoon Greek yoghurt
1 tablespoon vinegar
2 tablespoons olive oil
Avocado Tzatziki
2 Hass Avocados, reserve half an Avo for garnish
1 cup Greek-style yoghurt
2 small garlic cloves, minced or crushed
juice of half a lemon
salt to taste
1 tablespoon olive oil
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh mint
1 small finely chopped Lebanese cucumber

Method

Start marinating your chicken by combining all the spices with your chicken, along with the yoghurt, vinegar & olive oil. Set aside while you start on your Avocado Tzatziki.

For the Avocado Tzatziki

In a food processor combine the Greek yoghurt with the avocado. Add your garlic, lemon juice, salt and olive oil.

Blend until combined and smooth.

Place mixture in a bowl and gently stir through the fresh herbs and diced cucumber.

To cook chicken:

Simple pan fry on medium/high for about 12 minutes or until golden and cooked through.

Serve over steamed basmati rice, add a dollop of avocado tzatziki, some pita and optional pickled cucumber & pickled red onions.
