Avocado & Shredded Egg Breakfast Toastie

Ingredients

½ Large Hass Avocado
2 Eggs
2 tbsp Jarred Roasted Red Peppers, finely chopped
1 tbsp Chives, finely chopped
2 Slices of Streaky Bacon
2 Slices of Sourdough Bread
¼ tsp Sea Salt
¼ tsp Chilli Flakes
1 tbsp Fresh Lemon Juice
1 tbsp Butter
Parmesan Cheese, grated, to taste

Method

Add the eggs to a small pot of boiling water and boil for 9 minutes. Transfer to ice water to chill for 10 minutes.

Lay two pieces of streaky bacon on a lined baking tray and bake for 15 - 20 minutes in a 200C oven, until crispy.

In a bowl add the avocado, grate the eggs on top of the avocado followed by a the chilli flakes, salt and fresh lemon juice the mix together.

Spread the finely chopped red peppers over one slice of the sourdough, top with the crispy bacon, followed by the avocado egg mixture, some freshly grated parmesan and the chives. Place the other slice of sourdough on top.

Bring a pan to medium heat and melt the butter. Gently add the sandwich to the pan and grill on both sides until golden.

Allow to cool slightly before slicing in half and enjoy!
