
Ingredients
1 medium Hass avocado
50 g semi-sundried tomatoes
4 chicken breasts
8 thin slices of prosciutto

Method

Preheat oven to 180C. Line a baking tray with baking paper.

Scoop out and slice avocado. Finely chop sundried tomatoes.

Slice chicken breasts horizontally across, but not all the way across, to make a pocket. Open up the chicken breast and layer one half with chopped semi-sundried tomatoes and avocado. Close the flap back over the stuffing.

Place 2 slices of prosciutto on the paper-lined tray, overlapping slightly. Place the stuffed chicken breast on top of the prosciutto and wrap it over the chicken.

Bake in the preheated oven for 25 mins.

Serve with steamed rice and rocket salad.
