Avocado and salmon tacos

Ingredients

6 soft tacos shells / tortillas
1 avocado
1 lime, cut into wedges
2 x 150g hot smoked salmon fillets, flaked
1 red onion, finely sliced
1/4 cup sour cream
1 red chilli, seeds removed and chopped
½ cup coriander leaves

Method

Halve avocado and remove seed. Slice into thin strips, drizzle over lime juice to stop from going brown then set aside.

Warm tortillas in the oven or microwave if desired.

Place taco on the bench and spread over some sour cream. Top with avocado, salmon, onion, chilli, coriander and sprinkle with lime juice and season.
