
Place a large frying-pan over a medium/high heat and add half the olive oil, tomatoes and garlic with a pinch of salt. Sauté for 2-3 minutes then add the silverbeet and cover to cook and wilt for 2 minutes. Set aside, seasoning to taste.
Place a medium frying pan over a high heat, add the remaining olive oil, crack in the eggs and cook to your liking, adjusting the heat to give you a crispy white. season to taste.
Halve the avocados, thinly slice and fan out.
Reheat the grains, spoon them between two bowls, and add the silverbeet mix, eggs, avocado and feta. Season the avocados to taste, drizzle with a little olive oil and squeeze over the lemon.
