 2 Avocados
 1 Lemon, juice of
 Salt & Pepper, to taste
 4 Slices of Sourdough Bread, toasted
 8 Slices of Smoked Salmon
 100 g Marinated Feta
 Everything Bagel Seasoning, sprinkle
 Handful of Sprouts (Alfalfa, Mung Bean or Broccoli)
 ¼ cup Picked Red Onions
 2 tbsp Tiny Capers
 Lemon Wedge to serve
 2 Poached or Boiled Eggs (Optional)

Scoop out the avocado flesh into a bowl and smash using a fork.

Stir through the lemon and season to taste with salt and pepper. Set aside.

Spoon this over the toasted sourdough, top with feta then lay over the smoked salmon.

Sprinkle with the bagel seasoning, capers and a few pieces of pickled onions.

Finish with the sprouts and a drizzle of olive oil.

Serve with optional poached or soft boiled eggs and lemon to squeeze over.
