Avocado Sesame Soba Noodles

 1 avocado
 180 g dry soba noodles (2 serves)
 3 tbsp soy sauce
 2 tbsp rice wine vinegar
 1 tbsp maple syrup
 1 tbsp sesame oil
 1 tsp sugar
 1 tbsp olive oil
 ½ cup edamame beans
 ½ cup sliced spring onion
 ½ tsp red chilli flakes
 3 garlic cloves, minced
 2 tablespoons sesame seeds (white and black)

Cook soba noodles as per the packet instructions. Drain and set aside.

Make the stir-fry sauce by mixing soy sauce, vinegar, maple syrup, sesame oil and sugar in a bowl.

Heat oil in a small wok on high. Add edamame beans and spring onions. Stir-fry for 40 seconds. Add chilli flakes and garlic and cook for 20 seconds until fragrant. Add noodles and stir-fry sauce. Toss and mix well. Cook for 1–2 minutes until heated through. Remove into a serving bowl.

Cut the avocado in half. Discard the seed and skin. Add sesame seeds to a small shallow bowl. Dip each avocado half in the sesame seeds, cut side down. Place the sesame crusted avocado on the noodles and serve immediately.
