Avocado Tzatziki
 2 Avocados
 1 cup Greek Style Yoghurt
 1 Lebanese Cucumber, grated and squeezed dry
 ¼ cup Mint Leaves, finely sliced
 1 clove Garlic, crushed
 1 Lemon, juice of
 Salt & Pepper, to taste
Chicken Kebab
 500 g Chicken Thigh
 1 Brown Onion
 1 clove Garlic, crushed
 1 Lemon, zest & juice
 1 tsp Cumin
 1 tsp Dried Oregano
 1 tsp Paprika
 1 Brown Onion, halved
 2 Skewers
To Serve
 4 Pita Bread
 1 Tomato, sliced
 2 cups Iceberg Lettuce, shredded
  cup Pickled Onions

For the tzatziki, scoop the flesh from the avocados into a bowl. Mash with a fork and stir through the yoghurt, cucumber, 1 clove crushed garlic, juice 1 lemon and mint leaves. Season to taste and refrigerate.

Marinate the chicken with the olive oil, cumin, paprika, oregano, remaining garlic crushed, zest & juice 1 lemon.

Place the onion, cut sides town into a baking dish next to each other. Insert a skewer into the top of each onion half then begin skewering the chicken thigh onto the skewers.

Preheat an oven to 220C. Cook the chicken for 40 minutes, basting throughout cooking with juices in the baking dish.

Slice the chicken into the tray. Build the wrap with lettuce, tomato, pickles, the chicken and finish with the avocado tzatziki.
