Avocado Egg-In-A-Hole

 1 ripe Shepard avocado
 2 small eggs
 ¼ small red onion, finely diced
 ¼ small red capsicum, finely diced
 2 tsp fresh chives, chopped
 sprig of fresh dill
 wholegrain toast

Preheat the oven to 180 °C.

Slice avocado in half and remove seed.

Crack 1 egg in each avocado half, then top with onion, capsicum and chives.

Bake until the egg is just cooked.

Remove from the oven, serve with fresh dill and wholegrain toast. Enjoy.
