Avocado Bruschetta Pizza

Pizza
 1 tsp garlic, freshly minced
 2 tbsp olive oil
 ½ tsp salt
 1 store-bought or homemade pizza base
Avocado Pesto
 ¼ cup pine nuts, plus extra to serve
 1 cup firmly packed basil, leaves picked
 ½ cup parmesan cheese, freshly grated
 ½ tsp salt
 1 Hass Avocado
 2 tbsp olive oil
Avocado and Tomato Topping
 1 Hass Avocado, cubed
 ¼ cup firmly packed basil, leaves picked
 2 cups mixed mini tomatoes
 2 tbsp olive oil
 1 tbsp red wine vinegar
 ½ tsp salt
 ½ tsp black pepper

Preheat the oven to 230°C fan.

Combine the minced garlic, olive oil and salt in a small bowl.

Spoon the olive oil and garlic mixture onto the pizza and spread evenly.

Bake for 5-8 minutes or until golden and crispy.

To make the avocado pesto, place the pine nuts, basil, parmesan and salt in a food processor, and blend until the mixture resembles a fine crumb.

Add the avocado and olive oil, and blend until smooth.

Top the pizza base with the avocado pesto.

Combine the avocado and tomato topping ingredients and pile them into the centre of the pizza.

Sprinkle with extra pine nuts and serve immediately.
