Avocado and chicken Gyros with an avocado Tzatziki

Chicken Gyros:
 450 g chicken thigh, about 3 medium thighs
 3 tbsp yogurt
 1 lemon juice + zest
 3 -4 cloves fresh garlic
 1 tsp each seasoning: salt, pepper, paprika, oregano, thyme
Avocado Tzatziki:
 ½ Australian Avocado (reserve the other half to slice and serve in the pita)
 ¼ - 1/3 cup yogurt
 1 cucumber- scoop out the middle then shred, add to a paper towel or cheese cloth and squeeze out all the liquid
 1 tbsp red wine vinegar
 1 lemon juice
 3 -4 cloves fresh garlic
 Seasonings: salt pepper, dill and mint (fresh or dried)
Homemade Fries:
 400 g white potato
 1 tsp olive oil
 Seasonings: paprika, salt, pepper, mixed herbs
For the Gyros:

Let marinate for 30 mins or overnight.

Air-fry at 200c for 15 minutes flipping halfway or panfry on medium-high heat for 12-15 minutes.

Cover in foil and let it rest whilst airfrying the fries. Chop into smaller pieces when ready to serve.

For the Homemade Fries:

Air-fry at 160 for 10 mins then air-fry at 180c for 10 mins
OR bake at 180c for 20-25 mins

Grab a warm pita, top with avocado tzatziki, slices tomato, red onion, avocado slices, chicken and homemade fries & enjoy.
